In lieu of Valentine’s Day, (which in case any of you forgot, it’s this Thursday!) I thought I’d go ahead and post my first recipe…one that is oh-so-very good and absolutely perfect for a V-day dessert! And what’s even better, they make for a pretty impressive presentation. I made these for a Sunday School fellowship and I think I stooped a lot of people into thinking I was a lot more talented than I really am!
These are so simple and incredibly addictive! Don’t think you can just eat one!
Cake Truffles
Ingredients:
1 box of any cake mix (I used Duncan Hines’ Devil’s Food)
1 container of like-flavored cake icing (15 oz) (For instance, if you use chocolate cake, use chocolate icing)
1 package of almond bark
Directions:
Bake cake in a 9×13 pan as directed on box.
When cake is done and is still warm, crumble up the cake in a bowl.
Mix in the container of icing into the crumbled up cake until well-mixed and evenly distributed. This will be a bowl of really gooey and delicious cake, so prepare to get messy, but especially to exercise your self-control in not eating the whole bowl before you even get to the finish line! Allow this mixture to cool a bit. Feel free to put in the refrigerator about an hour.
Take the mixture and begin rolling into 1 1/2 inch balls. You can do this a little easier and hands-free if you have melon baller. Once this is done, chill in refrigerator on cookie sheet for 2 hours. Freeze if you need to save time.
Melt candy coating, take cake balls, and dip into chocolate. Let cool. If you’re really feeling creative, take some of the almond bark and put into piping bag and make designs, making them look a lot more like professional truffles. You may also sprinkle any kind of candy or sprinkles on the outside of these truffles while they are still hot.
When done, chill in refrigerator. Feel free to serve chilled or at room temperature.
You WILL be impressed!
Note:
You can alternate cake and icing flavors. The following combinations work well together:
Red Velvet Cake- Cream Cheese Icing- Almond Bark Coating
Chocolate Cake- Chocolate Icing- Almond or Chocolate Coating
Yellow Cake-Vanilla Icing- Chocolate Coating
Funfetti Cake- Vanilla Icing- Almond Coating

This sounds great. Makes me think of those oreo truffles people do. I saw them done with nutter butters the other day and they sound so good. This would be really good with strawberry/strawberry/white chocolate, too! Great picture. DId you take it or did CHarles?!
